The Cookie With No Name


Sex. That's how this whole project started. Not sex as in "sex" but sex as in Better-Than-Sex Cake. 

(Before I move on, is Better-Than-Sex Cake really better than sex? Hell no! Not even close, but if you want my recipe, that got rave reviews from friends, let me know.)

Anyway, back to the story. It was Labor Day. You know, the day of BBQs, swimming pools, and impromptu football games -- we did all of that and more. I was in charge of the dessert for the party at Grandma and Grandpa's. I had left over toffee bits from my Better-Than-Sex Cake recipe and some dark chocolate chips from this other culinary project (that failed miserably, by the way). These ingredients were screaming to be used, and I was sick of them hanging around my house. So here starts a new begging. 

(Holy crap! It's 8:15 A.M., and I have to get McCann out the door to school at 8:25. He still hasn't come out of his room yet. I'll be right back.) 

(Here I am again. Dang kid climbed back into bed. I should know better than to trust him to get dressed alone. I got him up, dressed, stuffed a quick breakfast down his throat and he got to school in plenty of time. It's amazing how much can be accomplished in just 10 minutes, if I put my mind to it.)

Back to the tale at hand. The gist here is that I made up a new recipe. I don't have a name for it, so make one up yourself. 

INGREDIENTS:

1 3/4 cup flour (sifted, not scooped)
3/4 baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
2 stick butter, softened 
1 1/2 cups brown sugar
1/4 cup sugar
3 large eggs
2 1/2 teaspoon vanilla bean paste (or just vanilla extract if you don't have any of that.)
3 1/2 cups old fashioned oatmeal
1 bag chocolate chips
2 bags heath toffee bits
1 small bag pecan bits (you can use walnuts or chopped almonds if you like. They are cheaper.)
Non-stick spray





Preheat your oven to 350. In a bowl, mix 1 3/4 cup flour, 3/4 baking soda
3/4 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.



Beat together 2 sticks softened butter, 1 1/2 cups brown sugar, 1/4 cup sugar, 3 large eggs, and
2 1/2 teaspoon vanilla.


Wow! I had just enough brown sugar.



Note:  I use Nielsen-Massey brand. You can buy it at Williams-Sonoma (very expensive) or if you have a TJ Max near you, they sell it there cheap. I got that tip from my good friend Kathryn. (Thanks Kathryn. Hope all is well in China.)


ANOTHER NOTE: This is the attachment I used to mix the cookie dough.


Enough with the side notes. Next step: pour the dry ingredients in with the wet and mix it all up. 


Now mix in 3 1/2 cups oatmeal. 


Whew! I just barley had enough of that too. 


Now mix in 1 bag of chocolate chips, 2 bags of heath toffee bits, and 1 small bag of pecan bits.


With a cookie scoop...


Scoop them out onto your baking sheet, BUT first spray the cookie sheet with non-stick spray. If you don't, the toffee will make the cookies stick to the pan. Bake for 7-10 minutes. 
 

Enjoy. I had a 100% satisfaction rate on this one.
